"If I had a 3 acre wooded lot and want to build a 7000 sq ft house (living space) and have a swimming pool and lawn/gardens in keeping with a 7000 sq ft residence, approximately how much of the 3 acres would need to be clear cut?"

Hi J.M.,
I have no idea.
There are too many variables and too many personal choices that have to be made by you.
What I would do, is hire the necessary professionals required to help me make this multifaceted decision.
These professionals would include:
1. The architect who drew my plans. (In most locales, large houses require an architect’s seal).
2. A professional, registered & insured land surveyor, who would draw the house, on paper, with my input as well as the architects', and with considerations for; topography, light, trees, distance from roads & neighbors, etc.
3. A professional landscape designer.
4. A professional Pool & Spa company.
That’s for starters, but you get the idea. Hire the professionals necessary to get a job done, including design and professional input.
This is what a General Contractor does.
